Potato Salad

It was wonderful to have hubby home for a full 72 hours before he had to hit the road. I haven't made potato salad in years so I searched the internet until I found the perfect one. Marshall said he didn't like potato salad. I told him I just wanted him to try it but he didn't have to eat it if he didn't like it. He tried it and ended up taking 3 servings. LOL

I cut the recipe in half. It didn't lost very long as it was a huge hit.

CREAMY MUSTARD POTATO SALAD
5 lb. potatoes, cooked, peel and dice fine
1 dozen boiled eggs, chopped fine
3 c. celery, chopped fine
1 lg. onion, chopped fine
3 tsp. celery seed

Mix above and add dressing.

DRESSING:

3/4 to 1 qt. salad dressing
1 c. sugar
1/2 c. mustard
1/3 to 1/2 c. white vinegar
